Chocolate sauce

Let's get started!

Place about 10 cm of hot water in a small saucepan and bring to the boil.

Combine the chocolate, water and sugar in a heatproof bowl and place over the water. Reduce the heat to low and simmer gently until the chocolate has melted, stirring the mixture occasionally.

When the chocolate mixture is smooth, remove from the heat and stir in the vanilla, cream and butter. Either use immediately or cool and refrigerate, covered, for up to 2 weeks. Once cold, the sauce will have set; to use, spoon out the required amount of sauce and heat gently either in a pan or in the microwave.


  • 300 g dark cooking chocolate, chopped
  • 250 mL cold water
  • 50 g caster sugar
  • 1 teaspoon vanilla essence
  • 1/2 cup pouring cream
  • 50 g unsalted butter
